The way an ingestible is structured, processed, presented and consumed can matter as much as its list of ingredients. Physical format is therefore both a scientific question and an opportunity for invention.

Questions we explore

We investigate gels, emulsions, encapsulation, texture, delivery systems, restructured foods and liquids, and other forms of reformulation. The enquiry spans material behaviour, stability, process feasibility and human experience.

Emerging possibilities

This is an intentionally applied area that overlaps the other seven. It does not represent a separate laboratory or claim that a specific proprietary delivery system is already validated. Different product challenges may open shared technical possibilities.
